Healthy Banana Bread & Pumpkin Bread Recipes

Raise your hands if you’re excited about Fall! I’m looking forward to the pumpkin treats, cooler weather and all the trendy stylish clothes. It is definitely one of my favourite times of the year and I have no idea why I get the urge to bake the moment the month of September hits - my chef’s hat is back on!

Little Fact About Me & Baking:

After living in my university’s residence for 4 years, I was so excited to finally have a kitchen once I moved out to my new apartment that I started baking 3-4 times a week! And since I lived alone, I had so much baked goods that were left untouched. I started to commute to the city every week and give all the baked goods to the homeless. So it ended up being a win-win situation, I got to enjoy the baking process while feeling so good about feeding the need! :) And now, living with my sister is a major plus because I get to share all the treats I make with with her!


As much as I love baking, I sometimes don’t get to eat much of what I make due to my sensitive stomach. So this year, I wanted to continue my love for baking but with healthier ingredients & alternative options.


Healthy Banana Bread - no sugar, no butter and whole wheat!


What I’ve been testing out lately is Banana Bread - I took the recipe from Gimmie Delicious and made 4 different types of banana breads with adding my own twist to each one to perfect a recipe I liked the most. And I wanted to share it with you!


Ingredients

2 eggs

1/2 cup olive oil

1/3 cup honey (or you can use naturally sweetened maple syrup)

1/4 cup milk (I prefer using lactose-free milk)

1 ½ teaspoon vanilla extract

3 bananas (make sure they are ripe! Makes a HUGE difference!)

1 ½ cups whole wheat flour

1 teaspoon ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons of Splenda (or any other sweetener) or 1/2 cup dark chocolate



Instructions

1) Preheat oven to 325F.

2) In a bowl, mix the flour, cinnamon, baking soda and salt. Set aside.

3) In a separate bowl, beat eggs, oil, honey, milk, sweetener and vanilla extract for 2 minutes. Stir in the bananas and flour mixture (or any other add ins of choice.)

4) Pour batter into greased pan

5) Bake for 50-55 minutes or until toothpick inserted comes out clean.

6) Cool for 10 minutes, slice and enjoy!


Healthy Pumpkin Bread- no sugar, no butter and whole wheat!


What’s so great about making the Pumpkin Bread is that the ingredients are the same as the Banana Bread except for one ingredient (pumpkin purée instead of banana!) The portions of each ingredient is different though so keep that in mind.


Ingredients

2 eggs

1/3 cup olive oil (or coconut oil)

1/2 cup honey (or you can use naturally sweetened maple syrup)

1/4 cup milk (I prefer using lactose-free milk)

1 ½ teaspoon vanilla extract

1 cup pumpkin purée

1 ½ cups whole wheat flour

1 teaspoon ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

Totally optional: ½ cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit


Instructions

1) Preheat oven to 325F.

2) In a bowl, mix the oil, honey, and eggs together. Set aside.

3) Add the pumpkin puree, milk, cinnamon, baking soda, vanilla extract and salt, and whisk to blend for 2 minutes.

4) Pour batter into greased pan and sprinkle lightly with cinnamon.

5) Bake for 50-55 minutes or until toothpick inserted comes out clean.

6) Cool for 10 minutes, slice and enjoy!
